Salsa Roja

I often play around throwing things together to make salsa. This one worked out wonderfully, and I have stuck to it ever since.


6 tomatoes
3 cloves garlic
2 Tbsp consome de pollo (chicken buillion)
1/2 onion
2+ Tbsp chipotle (I also replace the chipotle with 1 or 2 fresh Jalapeños.)


  1. Place whole tomatoes in boiling water for 5-6 minutes until they start to split.
  2. Place all ingredients in blender, and blend just until smooth.
  3. Heat a small amount of oil in a pan. Pour salsa in pan and simmer for about 12 minutes.
